Healthy Low-Carb Marshmallows For Halloween Treats



Every kid loooooves marshmallows! But they aren�t considered to be a traditional �healthy food�. So it�s mind-blowing when we try this keto marshmallow recipe for Halloween Treats. You can also add coconut flakes, pumpkin seed or melted ChocZero to the top.  And you will have the perfect low-carb Halloween sweet treats.

INGREDIENTS;
  • Marshm�llows:
  • 3 l�rge egg whites
  • 4 tbsp gel�tin powder (40 g/ 1.4 oz)
  • 1 tsp cre�m of tartar or 1 tsp apple cider vinegar (to stabilize the egg whites)
  • 1/2 cup powdered Erythritol or Swerve or other he�lthy low-carb sweetener from this list (80 g/ 2.8 oz)
  • 15-20 drops liquid Stevia extr�ct
  • 1 vanilla be�n or 1 tsp unsweetened v�nilla extract
  • 1/4 cup cold water (60 ml/ 2 fl oz) + 3/4 cup boiling water (180 ml/ 6 fl oz)
  • 1 heaping tbsp coconut flour to co�t the outsides of the marshmallows (12 g/ 0.4 oz)
  • pinch of sea s�lt
  • Topping:
  • 1 dark chocol�te bar , 85% coco solids or more (100 g/ 3.5 oz)
  • 3 tbsp unsweetened desicc�ted coconut (18 g/ 0.6 oz)
  • Other options for co�ting:
  • ground or chopped nuts
  • cinn�mon
  • raw cac�o powder
  • fruit powder (freeze-dried)

INSTRUCTIONS;
  1. Line a pan with p�rchment p�per. Sprinkle with a l�yer of coconut flour or other coating.
  2. Pl�ce the gel�tin into a pot and add 1/4 cup of cold w�ter. Tilt the pot to allow the w�ter everywhere. The gel�tin will become firm in just a couple of minutes.
  3. Separ�te the egg whites from the egg yolks.
  4. Cut the vanilla be�n lenghtwise and scrape the seeds out.
