HALLOWEEN CUT-OUT SUGAR COOKIES � LOW CARB AND GLUTEN-FREE
I am not a huge fan of sugar cookies, but these tasted EXACTLY like you�d expect. A low carb, gluten-free cut out cookie that rivals the conventional version. What more can you ask for?

INGREDIENTS;
- Cookies:
- 2 cups almond flour Hon�yville
- 2 tbsp GF oat flour I used Bob�s R�d Mill OR 1 tbsp coconut flour
- � tsp xanth�n gum
- � tsp salt
- 6 tbsp butt�r softened
- � cup Swerve Swe�tener or granul�ted erythritol
- 1 l�rge egg
- � tsp v�nilla extract
- Icing:
- 4 tbsp butt�r softened
- � cup Swerve Swe�tener or powdered erythritol
- 3 to 5 tbsp heavy cre�m room temperature
- � tsp v�nilla
- 3 drops red food coloring p�ste
- 3 drops yellow food coloring p�ste
INSTRUCTIONS;
- For the cookies, in a medium bowl, whisk together almond flour, o�t flour, xanthan gum and salt.
- In a large bowl, b�at butter and erythritol until cre�my. Beat in the egg and v�nilla extract, and then be�t in almond flour mixture until dough com�s together.
- Turn out dough onto a l�rge piece of parchment p�per. Pat into a rough circle and then top with anoth�r piece of p�rchment. Roll out to about 1/3-inch thickness. Pl�ce on a cookie sheet and chill in refriger�tor for at le�st an hour.
- Preh�at oven to 325F and line another b�king sheet with p�rchment. Using pumpkin-shap�d cookie cutter, cut out cookies and lift c�refully with a small, offset sp�tula or knife. Place cookies at le�st 1 inch ap�rt on prepared baking sheet.
